
Quick-seared shrimp in lemon butter over cauliflower rice.
Shrimp cooks in 3 minutes and has crazy high protein for its size.

Microwave cauliflower rice according to packet (usually 3-4 minutes).
Melt butter in a pan over medium-high heat. Add garlic for 30 seconds.
Add shrimp. Cook 2 minutes per side until pink.
Squeeze lemon juice over the shrimp. Season with salt and pepper.
Plate cauliflower rice, top with shrimp and pan juices.
