Crack 3 large eggs into a bowl and whisk with a pinch of salt and 1 tbsp milk.
Toast 1 slice of bread and cut into thin strips (soldiers).
Melt 1/2 tsp butter in a non-stick pan over low heat. Pour in eggs.

Stir gently and continuously with a spatula over low heat until eggs are just set but still creamy, about 3 minutes. Remove from heat while still slightly wet.
Use gluten-free bread for GF. Skip milk and butter, use olive oil for dairy-free.

Serve eggs with toast soldiers on the side. Season with pepper.
