
3 eggs scrambled soft with cottage cheese folded in, piled on toast and sprinkled with hemp. Rich without butter-bomb.

Toast 1 slice of bread.
Whisk 3 eggs with a pinch of salt. Stir in 50g (about 3 tbsp) low-fat cottage cheese.
Melt 1 tsp butter in a small non-stick pan over low heat.
Pour in the egg-cottage mix. Stir gently and continuously with a spatula for 2-3 minutes.
Remove from heat while still slightly wet — the residual heat finishes them soft. Season with pepper.
Pile onto the toast. Sprinkle with 1 tbsp hemp seeds. Eat while warm.
