Good hot or cold fridge or freezer. Per cup just 90 cal 9g protein.
Serves 6 · 10 min prep · 20 min cook
Preheat oven to 190C. Grease a 6-cup muffin tin.
Steam cauliflower until soft. Drain well.
Mix cauliflower with ricotta, cheddar, egg, egg white, yogurt, and seasonings.
Scoop evenly into 6 muffin cups.
Bake 20 minutes until golden on top and set.
Cool 5 minutes. Store in fridge up to 5 days or freeze.
