
Red lentils with carrot celery and cumin simmered into a thick stew.
Red lentils break down into a soft mush much easier to digest than whole lentils.
Serves 1 · 5 min prep · 20 min cook
Heat 1 tsp olive oil in a pot. Add onion, carrot, and celery. Cook 3 minutes.
Add cumin. Stir for 30 seconds until fragrant.
Add red lentils and vegetable broth. Bring to a simmer.
Cook 15-18 minutes until lentils are completely soft.
Season with salt and pepper.
Serve in a small bowl. Makes 2 portions.
