Steam 1.5 cups (150g) cauliflower florets until very soft, about 8 minutes.

Skip butter and use olive oil for dairy-free. Use firm tofu steak for vegetarian.
While cauliflower steams, season a 4oz (115g) chicken breast with salt, pepper, dried oregano, and lemon zest.
Cook chicken in a lightly oiled skillet over medium heat, 5-6 minutes per side until cooked through.

Mash the cauliflower with 1 tsp butter, pinch of salt, and a splash of milk until smooth.
Slice the chicken and serve over the mash. Squeeze fresh lemon on top.
Pound the chicken to even thickness before cooking so it cooks evenly and stays tender.
