Three-ingredient pancakes made from oats, eggs, and banana with a scoop of protein powder. Batch-cook friendly and freezer-stable.
These freeze beautifully — make a batch of 12 on a good day and reheat from frozen in the microwave (60 seconds). Great for mornings when cooking feels like too much.

Add 40g rolled oats, 1 medium banana, 2 large eggs, and 1 scoop (25g) vanilla protein powder to a blender. Blend until smooth.
~2 min
Use gluten-free oats for GF. Replace banana with 60g pumpkin puree for lower sugar. Any protein powder flavour works.
Heat a non-stick pan over medium heat and lightly grease with cooking spray.
~1 min
Pour batter into 3 small pancakes (about 3 inches each). Cook until bubbles form on the surface, about 2-3 minutes.
~3 min
Flip carefully and cook for another 1-2 minutes until golden.
~2 min
Serve with a thin drizzle of honey or a few fresh berries if desired.

Use gluten-free oats if coeliac. The banana provides natural sweetness so you can skip any added sugar. Batter should be pourable but not watery.
