
Day-old rice stir-fried with eggs peas and soy sauce.
Use leftover rice from last night. Add shredded chicken for extra protein.
Serves 1 · 2 min prep · 6 min cook
Heat sesame oil in a pan or wok over high heat.
Add frozen peas. Stir-fry 1 minute.
Push peas to the side. Crack 2 eggs into the pan. Scramble loosely for 1 minute.
Add the cold rice. Stir-fry everything together for 2-3 minutes.
Add soy sauce. Toss to coat evenly. Serve immediately.
