Preheat oven to 175C (350F). Grease a 6-cup muffin tin.
In a blender or bowl, blend 6 large eggs and 150g (5 oz) low-fat cottage cheese until smooth.
Dice 100g (3.5 oz) cooked ham into small pieces. Distribute evenly across the 6 muffin cups.
Pour the egg mixture over the ham, filling each cup about 3/4 full.
Top each bite with 12g (a generous pinch) shredded sharp cheddar — 75g total across the 6 bites.
Bake 18-20 minutes until set and slightly golden on top.
Cool 5 minutes, then lift out. Store in fridge up to 5 days or freeze up to 1 month.
To serve: reheat 2 bites in the microwave for 30-40 seconds. One serving = 2 bites.
