Silken tofu is incredibly gentle — it practically melts in your mouth. Good for days when you can manage a proper breakfast but want something very easy to eat.

Place 150g silken tofu in a microwave-safe bowl. Microwave for 1 minute until warm.

Microwave 80g frozen shelled edamame with a splash of water for 2 minutes.

Use tamari instead of soy sauce for gluten-free. Swap sesame for hemp seeds if sesame allergy.
Top the warm tofu with edamame, 1 tsp sesame seeds, a drizzle of soy sauce, and a pinch of chilli flakes if desired.

This is inspired by Japanese hiyayakko (chilled tofu) but served warm. Silken tofu comes in shelf-stable cartons — keep a few in the cupboard.
