
Fluffy mini pancakes from cottage cheese eggs and oats.
Make 6 mini ones so you can stop after 2 or 3.

Blend cottage cheese, eggs, oats, baking powder, cinnamon, and vanilla for 20 seconds.
Heat a non-stick pan on low heat. Lightly grease.
Drop small spoonfuls to make 6 mini pancakes.
Cook 2-3 minutes per side until golden.
Serve with yogurt or berries.
