Spread sweet potato, Brussels sprouts, and courgette on a large baking tray.
Toss vegetables with olive oil, salt, pepper, and garlic powder.
Nestle chicken thighs among the vegetables. Season with paprika.
Roast 25-30 minutes until chicken is golden and cooked through.
Divide into 3 portions. Refrigerate extras for the next 2 days.
